Neither, honestly. It's personal. We cook ours the northern way: a clear, savoury broth with only a little sugar, and days and nights have gone into it before it reaches you. Top-quality beef, short rib and oxtail cooked until they let go, herbs with real fragrance. That part is ours. The rest is yours. Lime, chilli, hoisin, sriracha are all on the table.
